If you are willing to relocate, you could take one night in Kinsale and one in Midleton, seeing Cobh between the two. The downside of each is a lack of decent eating/drinking options nearby, so you will end up driving or on a bus or train in the evening. Either hotel is easy to access with a car, unlike some of the options in Cork City Centre. The Clayton Silversprings has a stop next to it for the 260 and 261 buses, which both stop in Midleton, but aren't as frequent as the train. The Radisson Hotel in Little Island is walkable to Little Island train station, which is a stop between Cork and Midleton.
